Every now and then we will be giving you a chance to get to know our local, Downtown business owners – your friends and neighbors – who make Downtown such a special place. We’d like to introduce you to Nick and Avery Santos, owners of Cafe Sol, 420 Main Street.
Nick and Avery met at CSU. Avery was originally from Grand Junction and over the years they would come to the western slope to visit family. Nick was impressed with the abundance of local produce and how accessible a farm-to-table style restaurant would be. Both, having been in the restaurant industry for many years, saw great potential in the Grand Valley.
They then got hands on experience as they pursued a culinary adventure in Nicaragua. Nick was the sous chef at Rancho Santana, where much of the food served was either grown onsite, caught fresh in the ocean, or raised on the property.
Years later, they were ready to call GJ home. With their first baby on the way, an amazing opportunity to be in the heart of downtown presented itself. They got busy making relationships with local farmers and opened Café Sol. Café Sol serves breakfast, lunch and catering with as much locally grown products as possible. Nick and Avery say, “We are forever grateful the community has supported our passion for fresh and locally sourced food.”
